Recipe Ingredients

1 pkg. turkey tenderloins (usually 2 in a pkg)
1/2 a pkg of turkey bacon (pork is good too)
1 tbs of Dijon mustard
1 tbs of light brown sugar
2 heaping tbs of basil mayo
(which is just mayo mixed with fresh basil &
lemon juice)
1 tsp of lime juice
1 delicious can of regular Rotel
and a dash or two of salt and 2 or 3 dashes of pepper ( to your liking)

Directions

Mix the Rotel with the dijon, brown sugar, lime juice, basil mayo and salt and pepper in a bowl. Take your pieces of bacon and coat them in the Rotel mixture. Then in a glass baking dish (sprayed with non stick spray for easier clean up) wrap the tenderloins completely in the bacon pieces. They will be dripping in the rotel mixture and smelling yummy! Then when you are done with the wrapping process, pour the remaining Rotel mixture over the tenderloins. Cover loosely with aluminum foil and bake for 1 hour and 20 minutes at 375 degrees (I use the convection feature but ovens vary) then after cook time is up, uncover and continue baking for 10 more minutes. The bacon will crisp up and be beautiful!
