Recipe Ingredients

1 lb. of chicken breast
2 cans of Rotel
1 green pepper - diced
1 red pepper - diced
1 onion - diced
3 cloves garlic - minced
4 Strips of bacon
2 large cans of chicken broth
2 cups of barbecue sauce
1 cup of red wine
1 can of black eyed peas
3 large potatoes - sliced and boiled

Directions

Fry bacon in a large soup pot until crispy, set aside and drain excess grease. Add and saute diced onions, red and green peppers and garlic until soft. Add chicken broth, Rotel, black eyed peas, barbecue sauce and red wine. Bring to boil, reduce heat and simmer. Add chicken breast. Once cooked through remove and shred and return to soup. Crumble bacon and add to soup. Serve with fresh bread.
