1lb ground beef1 can corn
1 can green beans
1 can black beans
1 can rotel (I prefer extra hot if you can get it, otherwise Mexican festival)
2 cans cream of mushroom soup
fresh cilantro - chopped
cheddar cheese - shredded
2 boxes jiffy corn muffin mix
2/3 cup milk
2 eggs
Directions
Brown and drain the ground beef.Mix all ingredients except corn bread into a large glass rectangular baking dish very well. set aside.
Follow directions on corn muffin box by mixing milk, eggs and corn muffin mix together in bowl.
I like to let all this sit for 30 minutes or so to set. . . you can refrigerate even for a bit so all the flavors mix.
Pour corn bread over the other ingredients and even out. Bake at 400 for 20 minutes or until corn bread is done. Let sit for 5-10 minutes.
