Recipe Ingredients

For Polenta "pizza crust"*:
-6 cups water
-1 3/4 cup yellow cornmeal
-3 tbsp unsalted butter
-1/2 tsp salt
-1/2 tsp pepper
-garlic and onion powder to taste
-1/2 cup Parmesan cheese, grated

*Could also use pre-made polenta. The above ingredients are only necessary if you'd like to make the polenta from scratch.

For breakfast topping:
-1/2 medium onion, chopped
-1/2 cup mushrooms, sliced
-2 tsp olive oil
-4 eggs (or egg substitute equivalent)
-5-6 frozen sausage links
-1/2 cup shredded cheddar cheese
-1 can Ro*Tel
-Salt and pepper to taste

Directions

-Preheat oven to 400*F. Spray a 9-inch baking dish with non-stick cooking spray, set aside.
-In a large saucepan, bring 6 cups of water to a boil, add salt.
-Gradually whisk in cornmeal.
-Reduce heat to low, cook until thick, stirring often, for 15 minutes.
-Turn off heat.
-Add pepper, garlic & onion powders, butter and parmesan cheese. Stir until cheese and butter are melted.
-Pour polenta into baking dish and bake for 10-15 minutes.

Meanwhile, pour olive oil into a heated pan. Add onions and mushrooms, sauté until tender.

-Prepare sausage links as directed and chop into small pieces.
-In a mixing bowl, whisk together eggs, mushrooms, onions, sausage, Ro*Tel, cheddar cheese, salt and pepper.
-Remove polenta from oven and pour egg mixture on top. Return to oven and bake for an additional 30-35 minutes, or until desired crispness is achieved. Allow to cool for a few minutes before serving.
