Recipe Ingredients

CHA CHA Chicken Casserole

3 cups cooked, diced chicken
1, 10 ounce package frozen chopped spinach, thawed and WELL drained (squeeze all the water out)
1 small onion, chopped
1 tablespoon butter
1/4 cup jarred pickled Jalapeños, roughly chopped, (you can use canned but jar has better flavor)
8 ounces Low far Cream Cheese, softened
1/3 cup light sour cream
1, 10 ounce can Ro-tel tomatoes, drained (I like the HOT but you can use any)
1 tablespoon chili powder
1/2 tablespoon cayenne
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
8 ounces 2% cheddar cheese, shredded

Directions

Sauté the onion in butter until tender; Dice raw chicken into cube sizes put in skillet with onion, add chili powder, cayenne, onion & garlic powder. Salt and pepper to taste. Combine cooked chicken and spinach in a greased 2 1/2 quart casserole along with all remaining ingredients, mix well (yes it should look that way).

Bake, uncovered, at 350º 40-50 minutes, until bubbly and hot.
