Recipe Ingredients

1 whole chicken
1 can each cream of mushroom and cream of chicken soup
12 taco shells
1 can Ro*Tel (your choice of hotness)
2 cups grated sharp cheddar cheese
Salt and Pepper to taste

13x9 oblong glass baking dish
Cooking spray

Directions

Cook chicken and retain broth to soak taco shells in later. Remove chicken skin. Debone chicken and then cut into small pieces.

Preheat oven to 350 degrees.

Spray baking dish with cooking spray. Soak taco shells in chicken broth and line the bottom and sides of dish with them.

Spread the cut up chicken along the shells. Mix the two soups together and pour over the chicken. Sprinkle about 1/3 of cheese over the soup. Pour Ro*tel over the cheese.

Place in oven and bake for 30-40 minutes or until bubbling real good. Remove from oven sprinkle the rest of the cheese over mixture and return to oven until it melts.

Remove from oven and let sit for about 10-15 minutes. Serve with slaw and greens beans for a nice meal.
