2 lbs ground beef1 small onion chopped
2 packages taco seasoning
1 can dark red kidney beans
1 can hot chili beans
1 can original Ro*tel
12 flour tortillas
2 cups shredded cheddar cheese
1 cup sour cream
choice of toppings that you would put on a taco (i chose to use lettuce, tomatoes, and olives)
handful of crushed tortilla chips
Directions
Preheat oven 350 degrees, spray 13x9 pan with non-stick spray. Brown ground beef with onion on medium heat until meat is no longer pink. Drain excess grease. Add taco seasoning to meat and stir(do not add water to meat. In a large bowl stir together the 2 cans of beans and can of Ro*tel. (Do not drain). Dredge the tortillas in the bean mixture juice and line 13x9 pan. Spoon half of the bean mixture over tortillas and then half of the meat. top with 1 cup of the cheese. Repeat with the tortillas, rest of beans, meat and rest of cheese. Bake at 350 degrees for 30 minutes until cheese is melted. Remove from oven and let cool for 5-10 min. Spread with sour cream. top with your favorite taco toppings, lettuce, tomato, olives, etc... Crush handful of tortilla chips over entire dish. Cut into desired squares and serve.
