Chili Ingredients:1 ½ lbs. ground beef
1 medium onion (chopped)
1 red bell pepper (chopped)
2 tsp salt
2 cans kidney beans (27 oz.)
2 cans (14.5 oz.) tomato sauce (29 oz.)
2 - 10 oz. Ro*tel Chili fixin’s seasoned diced tomatoes
and green chilies cans
3 Tbsp. tomato paste
2 Tbsp. canned chipotle sauce
1 Tbsp. sweet paprika
3 Tbsp. chili powder
1 tsp. granulated garlic
1 tsp. cumin
Cornbread batter:
2 – 8.5 oz. packages cornbread mix
2 eggs
¼ cup melted butter
2/3 cup milk
¼ cup sour cream
2 Tbsp. honey
Directions
Brown ground beef in a Dutch oven or deep skillet. After meat is cooked, add onions and bell peppers and sauté until vegetables become soft. Add remaining chili ingredients and cook on low heat for about 35 minutes.Pre-heat oven to 375°. Meanwhile, combine cornbread mix, eggs, butter, milk, sour cream, and honey with a hand mixer until smooth.
If using a Dutch oven, pour prepared batter over the chili and bake for 25 minutes or until cornbread is set. If you’re using a regular skillet to cook the chili, transfer chili to a casserole dish. Then, pour batter over chili and bake until cornbread is set. Remove from oven and enjoy!
