Flavorful slow cooked chicken tacos

Recipe Ingredients

3 frozen boneless chicken breasts
1 can of original Rotel (undrained)
1 packet of taco seasoning
1/2 onion (chopped)
1/2 cup of olive oil
1 14.5 can drained dark red kidney beans (optional)
Salt and Pepper to taste


- Sprinkle the taco seasoning over the bottom of the crock pot as the first layer.

- Then place the 3 frozen chicken breasts on top of the seasoning.

- Pour the undrained Rotel over the top of the chicken.

- Add the chopped onion

- Add the drained can of beans

- Pour the olive oil over everything.

Cover and cook for 4 to 5 hours.

Remove the chicken from the crock pot and pull it apart with a fork until all of it is shredded. Place back into the crock pot and add the salt and pepper. Stir ingredients together. Cook for another 30 minutes.

Serve over soft taco or hard taco shells (or both) with lettuce, sour cream and shredded cheese. Sliced black olives go very well also. Makes about 12 tacos.
