Delicious healthy main dish that can be made vegetarian if desired.

Recipe Ingredients

4 chicken breast halves cut into bite size pieces
3 large cans of Rotel (mild)
2 cans of black beans, drained
1 large green onion, seeded and chopped
2 onions, peeled and chopped (preferably sweet or Vidalia)
2 cloves of garlic, peeled and chopped
1 large bunch of cilantro, chopped
1 Tablespoon chili powder
2 Tablespoons Extra Virgin Olive oil
1 teaspoon salt
½ teaspoon pepper

Directions

1. In saucepan, cover chicken pieces with water and boil for 10 minutes. Turn off heat and let sit to cool in water.
2. In olive oil, sauté garlic, onion and green pepper for 2 minutes.
3. Add Rotel.
4. Add ½ of the cilantro.
5. Add salt and pepper.
6. Simmer for 30 minutes and add drained beans, simmer an additional 15 minutes.
7. Add cooked, drained chicken.
8. Season to taste. Add other ½ of cilantro and serve hot.

Simply omit chicken for an equally delicious vegetarian meal.
