6Recipe Ingredients
4 tablespoons butter1 cup small dice red pepper (roughly the size of a kernel of corn)
2 11-ounce cans of corn, drained
2 cups frozen edamame
1 10-ounce can of Original Ro*Tel Tomatoes (2 cans if you want more than
a hint of the border), not drained
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
Directions
Heat 2 tablespoons of butter in a saucepan on medium heatWhen the butter is melted, add the red pepper and sweat until tender
Add the corn, beans, Ro*Tel, salt and pepper
Raise the heat and bring to a simmer.
Simmer for 5 minutes
Remove from heat and stir in remaining 2 tablespoons of butter to finish.
