Recipe Ingredients

2 cups Tortilla Mix (I used Walmart Store Brand)
1 can of Rotel (I used Original)


Directions

Preheat griddle to 400-425 degrees. Open can of Rotel and drain reserving liquid. Place tomatoes and green chilies in a small strainer and with a fork mash to get more liquid to drain out. Then place tomatoes/chilies onto a paper towel and squeeze the last bit of moisture out of them and then set aside.

Heat reserved liquid in microwave until warm. Add rotel liquid to tortilla mix in a large bowl. Mixing well. Then add the strained/mashed tomatoes and green chilies to the dough and mix well and let rest. Knead dough for about 5 minutes until dough is smooth and elastic. If dough is sticky, add more mix. Cover dough with a damp cloth and let rest for 15 minutes. Divide dough into 8 portions. Roll out on a lightly floured surface to 1/8 inch thickness. Cook 1 - 1 1/2 minutes on each side until lightly browned.

Enjoy as a side to your favorite meal or use them for burritos, quesadillas or soft tacos!
