Recipe Ingredients16 oz.salmon
several cups of salt
1 can of RoTel (mild)
1/2 cup diced sweet onion
1 tbsp lime
couple dashes of hot pepper sauce
1 tsp pepper
1/3 cup chopped green onion
DirectionsThe day before lay salmon in a glass dish. Completely cover salmon with salt. Wrap dish with plastic wrap and refrigerate for 24 hours.
24 hours later, remove salmon from dish. Wash any remaining salt off the fish. Dice into bite size pieces.
In a large bowl, gently combine salmon with RoTel, onion, lime, hot pepper sauce, pepper, and green onion.
