Recipe Ingredients

Cooking spray
8 thin slices Black Forest Ham
1 (10 oz) can RO*TEL Original Diced Tomatoes & Green Chilies, drained
3 eggs
1/2-cup ricotta cheese
2 tablespoons grated Parmesan Cheese (canister not freshly grated)
1 tablespoon all-purpose flour
½ teaspoon baking powder
2 tablespoons minced fresh basil leaves
1 tablespoon minced fresh chives
½ teaspoon Italian or Mediterranean seasoning
6 basil leaves for garnish

Directions

Heat oven 375 degrees F. Coat 6 muffin cups with cooking spray.

Line each muffin cup with one slice of ham. Allow ¼” edge of ham to extend over cup. Cut or rip remaining ham in circles to form a second lining just on the cups bottom. Set aside.

Reserve 2-tablespoons of RO*TEL tomatoes for garnish; pour remaining tomatoes in a medium bowl. Add eggs, ricotta, and Parmesan; stir until almost smooth. Add flour, baking powder, basil, chives, and Italian seasoning; stir well. Pour ¼ cup egg mixture into each ham cup. Bake 15 minutes and then cover the muffin cups loosely with a sheet of foil. Bake for 10-15 minutes or eggs are set in the center. Gently remove ham cup with a butter knife. To serve, decorate the top RO*TEL tomatoes and a basil leaf. Makes 6 ham cups.
