Smoked Sausage in a spicy rice and vegetable mix

Recipe Ingredients

2 Small-Medium Green Peppers
1/2 Medium Onion
2-3 Stalks Celery
1 Lb. Package Smoked Sausage
2 Tsp. Vegetable or Olive Oil

1 10oz. Can Rotel Tomatoes (Original, Mild, or Hot depending on personal taste)
2 Tsp. Hot Sauce (optional)

1 46 fl. oz. Can Tomato Juice

1 Lb. Box Minute Rice

Directions

Preparation: Cut green pepper and onion in large or small pieces depending on preference. I prefer large chunks, but my husband likes small chunks. Slice the celery and smoked sausage as thick as you want.

Put the oil in a large nonstick pan on high heat. Add the vegetables and sausage. Saute for 5-7 minutes until the vegetables have cooked down a little. Stir every few minutes the entire cooktime.

Add the can of Rotel tomatoes, but DO NOT DRAIN them first. Also add the hot sauce. Let simmer for about 2 minutes.

Add the can of tomato juice and bring to a boil. Then add the rice and let boil until the rice is tender and most of the liquid is soaked up.

Let sit for about 5 minutes to cool and make sure most of the liquid is soaked into the rice. Then enjoy! I always add extra hot sauce to my personal servings!
