A great way to use left over turkey- with a kick!

Recipe Ingredients

* 12 small tortillas or 6 halved whole wheat flour tortillas
* 3/4 cup diced onion (I used white)
* 1+ cups shredded Monterey Jack cheese, divided.
* 2 ish cups shredded left over turkey
* 1/4 cup butter/margarine
* 1/4 cup flour
* 2 cups chicken broth
* 1 can Rotel

Directions

Method: Preheat oven to 425. Roll spoonfulls of onion, cheese and turkey in tortillas. Place in greased 9x13 seam-side down. Save some cheese for later. Meanwhile, melt butter in large skillet. Add flour and mix. Add broth and slowly bubble until thick. Add undrained can of Rotel, simmer a bit longer until thick again, stirring occasionally. Pour over rolled tortillas. Cover dish and bake for ~20 minutes. Uncover, top with remaining cheese and bake for 5 minutes or until cheese is melted. DELICIOUS!
