Cheesy Grits with Rotel and Sausage

Recipe Ingredients

1 Can Rotel
Grits (I use the kind that cook in 5 minutes)
1 pound of sausage
16 oz. Velveeta

Directions

Cook and drain sausage. Cook grits according to package direction but only cook for half the time. Then pour into crock pot. Add cooked sausage, Mild Rotel and 16 oz. Velveeta cheese (cubed) and stir into grits. I will cook 30 additional minutes in the crock pot on low. I like to use this as a recipe for potluck meals, especially breakfast potluck. I like that the crock pot can keep the grits warm and just the right consistency in case you have to be early for your potluck meal. I always come home with an empty crock pot.
