Sauteed Mahi-Mahi served over Yukon Mashed Potatoes

Recipe Ingredients

(4) 4 oz fresh Mahi-Mahi Fillets
(1) 10 oz can RO*TEL Chunky Tomatoes With Green Chile
(3) celery stalks - chopped
(1) med white onion - diced
(2) tbsp Sunflower oil
(2) tbsp parsley
(6) med Yukon Potatoes
(1) 32 oz carton of chicken stock
(1) 16 oz tub fat free sour cream

Directions

Peel potatoes. Place them in a large cooking pot with all of the chicken stock. Add water to cover potatoes. Boil under fork tender.

While the potatoes are cooking, pour sunflower oil in large sautee pan. Heat on med-high. Add Mahi-Mahi fillets, and cook for 3-4 mins on each side. (depending on thickness and preference) After flipping fillets, add can of RO*TEL Chunky, onion, and celery. Cook until veggie mixture tender. Do not stir, as to be careful not to break apart fillets. Set aside and cover to keep warm. Then drain the potatoes. Keep a small portion of the cooking liquid for mashing. Place potatoes in a medium bowl. Add sour cream, and 1/2 cup of cooking liquid. Mash, and add more liquid to get desired consistency. When finished, take 1/4 of the mashed potatoes and serve on plate. Rest one Mahi-Mahi fillet on top of each serving. Spoon veggie mixture and juices over fillet and potatoes. Sprinkle lightly with parsley. Serve and enjoy the "Marvelous Mahi-Mahi" with "Marvelous friends and family"!
