Recipe Ingredients

2 (8 oz.) cream cheese, softened
1 can Mexican Rotel with lime juice and cilantro, drained
1 jar Hormel real bacon pieces or 6 pieces of bacon fried crisp and crumbled
1 T. Mrs. Dash spicy seasoning blend
1 cup shredded Mexican cheese blend (cheddar & Monterey jack)
1 bunch green onion, divided
jalapeno pepper, green olive or cherry tomato for garnish, optional

Directions

Combine cream cheese, Rotel, bacon & Mrs. Dash with an electric mixer until smooth. Chop one green onion and add to mixture. Stir in cheese blend. There are now two options for finishing the cheese ball. You may roll the mixture into a large ball, wrap in plastic wrap and chill overnight. For a special gift box garnish for Christmas or birthday celebrations you may pour the mixture into a square plastic container lined with plastic wrap. Chill overnight. Unmold onto platter. Garnish with remaining green onions using the following instructions. Plunge 9-10 green onion tops into boiling water for 1 minute. Remove and drain. Run a green onion up each side of the cheese ball. Fasten with toothpicks. Make 4 green onion loops on the top of the ball to make a bow. Use a jalapeno pepper, olive or cherry tomato for the knot. Serve with Fritos scoops. Both presentations taste wonderful. The gift box garnish always gets rave reviews and comments.
