Recipe Ingredients

Shortening for greasing muffin pan
2 1/2 cups flour
1 cup yellow corn meal
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon baking soda
1/4 cup chopped fresh cilantro
2 small green onions, chopped
1 can (10oz.) Rotel Original Diced Tomatoes & Green Chilies
1 can (10oz.) Rotel Mexican & Lime Cilantro, divided
1/2 teaspoon Worcestershire sauce
2 large eggs
1/4 cup vegetable oil
Sour cream
1 green onion, chopped for garnish

Directions

Preheat oven to 350. Grease (6 cup) jumbo muffin baking pan with shortening. In large bowl mix together flour, cornmeal, sugar, baking powder, salt, pepper, baking soda, fresh cilantro and green onions. In medium bowl mix 1 can Rotel Original and 1/2 can Rotel Mexican Lime & Cilantro (reserving other 1/2 for later use), eggs and oil until blended. Stir into flour mixture just until moistened. Spoon batter evenly into muffin cups. Bake 20-25 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes. Remove from pan. Serve warm with sour cream, green onion and reserved Rotel Mexican Lime & Cilantro. Serves 6
