1 lb. lean ground beef1 medium onion, chopped
1/2 medium green pepper, chopped
1 can cream of mushroom soup
1 can chicken with rice soup
1 can Rotel
1 6 oz. can tomato paste
1 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. of crushed red pepper
1 package of corn tortillas
1 c. shredded mild cheddar cheese.
Directions
Sautee meat, onion and green pepper in skillet until meat loses its pink color. Drain any excess fat.In mixing bowl, combine soups, tomato paste, Rotel, and spices.
Layer the soup and meat mixture using the corn tortillas in between. Top with the cheddar cheese and bake at 350 degrees for 40 minutes.
Serve with side salad, garlic bread, and flan for a delicious Mexican meal!
