Recipe Ingredients

2 tbsp canola/blended oil
3-4 potato diced ( par boiled)
1 jalapeno
1/4 cup dark beer
1 can rotel
1 can blackbeans
1 tsp salt
1 tsp black pepper
1 tsp ground cumin
1 sprig fresh cilantro
1/4 cup queso fresco
1/2 onion diced

Directions

saute diced potato in 2 tbs canola oil. add onion and jalapeno(optional) to potato. cook for 10 mins stirring occasionally. ad 1/4 cup of beer and let it cook off. add one can of rotel and one can of blackbeans. add a pinch of each of the following; cumin, salt, pepper, and garlic powder. stir one more time and you are done. garnish with some fresh cilantro, queso fresco(feta cheese is also good)and a squirt of fresh lime if you like.

not just for breakfast. could also be served as a wrap for vegetarians or as a side dish with tacos or burritos.
