5 lbs Russet Potatoes1 can Ro*Tel tomatoes
1 lb Velveeta Cheese
1/2 stick butter
salt and pepper to taste
Morton Nature's Seasons, or your favorite seasoning blend, to taste
Directions
Preheat oven to 350 degrees.Peel and cube potatoes. In large stock pot, cover potatoes with water and boil until soft.
While boiling potatoes, make your Ro*Tel cheese dip. In medium bowl add cubed Velvetta cheese and tomatoes, undrained. Cook in microwave for 4 minutes. Stir and cook an additional 1 minute.
Drain potatoes well and return to pot. Add butter and mash. Now add cheese dip a little at a time. No need to measure, but start with adding 1/2 of the cheese dip. Stir and season to taste. Continue to add cheese dip until you have used about 3/4 of the dip.
Place in a 9 x 11 casserole and drizzle with remaining cheese dip. Bake for 20-25 minutes until top is slightly browned.
