1 package (5 1/4 oz) au gratin potatoes1 can (11 oz) whole kernel corn, drained
1 can (10 oz) RO*TEL diced tomatoes and green chilies, undrained
2 cups chicken broth
2 cups milk
1 8-oz package cream cheese, softened and cubed
Minced fresh parsley, optional
Directions
In a slow cooker, combine potatoes and sauce mix, corn, RO*TEL tomatoes and green chilies, chicken broth, and milk.Cook on low for 4-5 hours or until potatoes are tender.
During last hour of cooking, add cream cheese. Gently whisk or stir until smooth.
Serve in large bowls and sprinkle with parsley, if desired.
