Recipe Ingredients

1 1/2 pounds mixed yellow summer squash and zucchini, diced
1/2 cup red bell pepper
1/2 cup chopped shallots
1 bunch scallions, chopped
1 pint cherry or grape tomatoes, halved
1/2 pound string beans or French beans, trimmed and cut into bite-sized pieces
6 cloves garlic, minced
2 tablespoons extra virgin olive oil
juice of 1 lemon
3 tablespoons freshly chopped basil
1 tablespoon freshly chopped tarragon
1 can Rotel tomatoes, any flavor
8 to 12 wraps
shredded or grated Swiss or Parmesan cheese

Directions

Sauté the summer squash, zucchini, bell peppers, shallots, scallions, cherry or grape tomatoes, string or French beans, and garlic in the oil until the vegetables are soft. Add the lemon juice, basil, tarragon, and Rotel tomatoes and heat through. Cook until any liquid in the pan has evaporated. Heat or toast wrap bread and fill with ratatouille. Add cheese to taste. Roll up and cut in half. Serve with a salad.
