1lb salt-cured salmon fillets, 1/2" thick1 can diced Ro*Tel
1 Walla-walla or Maui sweet onion, diced
1 green onion, thinly sliced
Directions
To make salt-cured salmon, cover bottom of 9x13 glass casserole with rock sea-salt, place salmon fillet on salt, then cover fillet with more salt. Cover casserole dish with saran wrap, and store in fridge for 36-48 hours.After curing salmon, soak in cold water for 2 hours, changing water every 30. Pat dry, and cut into 1/2" cubes.
Place cubed salmon into medium glass bowl, then
gently work Ro*Tel tomatoes and onions into the salmon mixture.
Chill for 30m, then garnish with green onions.
