1 shredded rotisserie chicken1 onion diced (or 1 cup of frozen already diced onion)
1/2 cup diced green bell pepper
1 teaspoon minced garlic (jarred)
1 32oz box of chicken broth
1 can original Rotel
1 can black beans drained
1 cup frozen corn
1 Tablespoon ground coriander
1 Tablespoon ground cumin
1 Tablespoon chili powder
1 Tablespoon extra Virgin Olive Oil
1 bay leaf
Shredded Cheddar for garnish optional
Tortilla chips garnish optional
Sour Cream optional
Directions
Add Olive oil to a soup pot and turn to med heat. Saute the onions, bell pepper and garlic in the oil until onions are translucent. Add Shredded Rotisserie chicken until warmed through thenadd all spices, corn, rotel, black beans and chicken broth. Let soup simmer for at least 30 min
serve with cheese, sour cream and tortilla chips.
