Romaine Ham Salad Boats

Leftovers never tasted so good! The ham salad gets a twist with this jazzed up version using RO*TEL.

Recipe Ingredients

2 1/2 cups leftover ham (or deli-fresh carved honey ham works well), shredded or diced
1/2 cup celery, finely diced
1 (10 oz) can RO*TEL Mild, well drained
1 teaspoon Dijon mustard
2 hard boiled eggs, diced
1/2 cup mayonnaise
2 tablespoons maple roasted pecans, chopped (optional)
1 head of Romaine Lettuce, leaves separated, washed and dried

Directions

In a large bowl mix ham, celery, RO*TEL Mild, Dijon mustard, eggs, mayonnaise and pecans (optional) until well blended.

Take a romaine lettuce leaf and place a generous portion (1/4 to 1/3 cup) of ham salad on the leaf and serve.
