1 med onion- med dice1 green pepper- med dice
2 ribs celery- diced
2 tbl minced garlic
1 tsp white sugar
salt, black pepper and red pepper flakes to taste
1 pound Smoked Sausage- Sliced
1 med-large head green cabbage- cored and rough chopped
1 or 2 cans Rotel( I use 2)
2 cups chicken stock
Directions
Saute sausage in butter/olive oil 1 tbl each about 4 minutes on med heat, in dutch oven or med stock pot.Add: onions,peppers and celery and saute, Add: garlic last to prevent burning.
Add: cabbage and let it begin to sweat.
Add: chicken stock, salt,pepper,sugar
Bring to boil and turn heat down and cook 15 minutes, or until cabbage is almost tender
Add: Rotel, return to boil, turn heat off and cover and let steam.
Can be made without sausage
