Recipe Ingredients

1 16oz. can refried beans
2 eggs
1 can Rotel Chili Fixin's Tomatoes
2 cups shredded taco cheese
2 cups baking mix
cooking spray

Directions

1. Preheat oven to 350 degrees. In a standing mixer, blend the refried beans and eggs together on medium speed. Reduce speed to stir and add the Rotel and 1 cup taco cheese till blended. Add the baking mix and increase speed to medium and mix for 2 minutes.

2. Spray a mini muffin pan with cooking spray and use a cookie scoop to put a level scoop of the batter into each cup. Top the batter with a teaspoon of the remaining taco cheese. Place the pan into the oven for 15 minutes. Cheese should be a nice golden brown on the top and the puffs will be, well, puffed. Repeat process until all the batter is used up.

3. Remove pan from oven, cool for 2 minutes and remove puffs to a serving platter. Serve warm. Makes 4 dozen puffs.

Notes: I tested out my first batch before I made dinner - and ate an entire dozen! Watch out, these are incredibly addictive. These are so easy to make, great for last minute get-togethers and parties. If you use the vegetarian refried beans, they're completely vegetarian, too.
