Recipe Ingredients

1 cup diced celery
1 cup diced carrot
1 cup diced onion
3 Tablespoon tomato paste
2 garlic cloves minced
1/2 zucchini diced
1/2 cup corn kernels
1/2 small diced peel potato
4 cups (1 qt.) chicken stock
1 can Rotel original
1 bunch of cilantro (optional)
2 skinless chicken drumsticks
2 skinless chicken thighs
1 skinless split chicken breast
3 Tablespoons olive oil

Directions

Heat olive oil, add carrots, onion and celery and cook till tender. Add the tomato paste and cook while stirring about 2 minutes till the paste blends in with the vegetables. Add garlic, zucchini, stock, Rotel and 1/2 of the cilantro and the chicken. Bring to a boil, turn down to low, cover and cook. Skim foam off periodically After half an hour add potato and corn, continue to cook for another half hour. Remove cover and remove the chicken. Shred chicken with a fork and put back into soup pot and add remaining cilantro. Serves 8
