Recipe Ingredients

non-stick cooking spray
8 ounce fresh sausage links, mild or hot, cut into 1/2-inch chunks
8 ounce ground beef
1 (10-ounce) can Ro*tel Original Diced Tomatoes & Green Chilies
1 (28-ounce) can whole tomatoes
1 (6-ounce) can tomato paste
1 (1.25-ounce) package taco seasoning mix
1 (4-ounce) can mushroom stems and pieces, drained
1/2 cup diced green, red, and/or yellow peppers
1 (16-ounce) package linguine noodles, cooked according to package directions
1 (8-ounce) package shredded Cheddar cheese
1 (8-ounce) carton dairy sour cream

Directions

Spray a 3-quart saucepan with non-stick cooking spray. Add sausage to pan. Cook sausage over medium-high heat, stirring occasionally, until lightly browned on all sides. Add ground beef to pan. Cook and stir until ground beef is no longer pink. Drain off excess grease. Add Ro*tel, tomatoes, and tomato paste, breaking up tomatoes into chunks. Stir in taco seasoning mix, mushrooms and peppers. Lower heat to simmer. Cover and cook for 20 minutes, stirring occasionally.
To serve, place hot linguine noodles onto each of 8 serving plates. Ladle sauce over noodles. Sprinkle with Cheddar cheese and top each serving with an ounce of sour cream.
