Recipe Ingredients

• Bell Pepper chopped fine - about 1/2 - 3/4 the pepper
• Green onion chopped fine - about 3 stalks
• Garlic minced - I put in about a tbsp but…we are garlic fiends so, you may want to 1/2 this amount and just do one clove :)
• Olive oil - about 2 tbsp, enough to coat the pan
• Can Diced Tomatoes - do not drain
• Can Rotel - do not drain
• Shrimp about 1.5 to 2 lbs Raw - peeled and deveined
• White wine - anything dry, I usually go with Chardonnay
• Oregano - about 1 -2 tsp dried
• 4 oz Feta cheese crumbled
• Pasta noodles - you can go for the whole wheat variety if you want to be healthy but, normal pasta is fine too

Directions

OK - I usually do this in one pot - like a bigger stock pot - Go ahead and chop/dice up your green pepper, green onions and garlic. Heat the olive oil over med to med-hi heat and add the chopped up pepper/onions/garlic. Sauté until they are cooked - about 5 - 7 minutes, constantly stirring so they do not burn. Add the can of Rotel and can of diced tomatoes (don't drain either) and let that simmer over med-lo to medium heat for about 15 minutes. Now, add your raw shrimp and 1 cup of the white wine and sprinkle in your oregano and feta - keep some of the feta to sprinkle on top when you serve. You may want to add a bit of salt here to taste but, just a little. Cook until the shrimp are done (about 5 - 7 minutes) - you will know when they are pink, they are ready don't cook too long or they will be rubbery. Serve over linguine, sprinkle feta on top and enjoy - YUM :)
