1/2 cup quick grits1 can Original Ro*Tel
1/2 cup water
2 T lemon juice, divided
1 T salted butter
1/2 tsp salt
1/4 cup parmesan, fresh
12 large shrimp w/tails, deveined
6 slices bacon
Directions
In a 2 quart saucepan, add grits, Ro*Tel, water, 1 T lemon juice, butter and salt, stir over medium heat to blend. Reduce heat, cover and cook until tender and liquid is gone. If necessary, add more water to adjust consistency. Add freshly grated parmesan cheese. Stir until melted.Meanwhile, wrap shrimp with 1/2 slice of bacon or less depending on thickness. In a medium non-stick skillet, sear shrimp in 1 T lemon juice. Cook until pink and crisp.
Makes 4 servings. Garnish with fresh Italian herbs. Delicious with slices of toasted Italian Baguette.
