Recipe Ingredients

1. 20-25 large, thawed, cooked shrimp, shelled and tails removed;
2. 1 large, Red Bell Pepper, sliced into thin, long slices;
3. 1/2 of a large, White Onion, sliced into thin, long slices;
4. 1 large celery stalk, chopped;
5. Olive Oil of Choice;
6. Salt;
7. Pepper;
8. Can of Original RO*TEL
9. 3 Large Hoagie rolls

Directions

1. Prepare food for cooking: Slice vegetables & remove tails from Shrimp
2. Preheat Large, non-stick skillet on Medium heat
3. Pour 1 tablespoon of oil in skillet and add vegetables; salt and pepper to taste
4. Reduce heat to medium-low and stir occasionally
5. After 2 minutes, heat a second non-stick skillet to Medium heat; while it's heating up, pat the shrimp dry
7. Add RO*TEL to skillet, let heat for 1 minute, then add shrimp
8. Stir occasionally for 3 minutes, just long enough let the shrimp get hot and seasoned.
9. Turn off both skillets and slice Hoagie rolls in half; cover the bottom half with vegetables, then cover the vegetables with the RO*TEL Shrimp; may require fork!
