6Recipe Ingredients
-1 cup canned crushed tomatoes-Ro-Tel's Lime & Cilantro diced tomatoes, drained works great!-1/2 cup jarred roasted red peppers, drained & chopped
-1/4 cup canned diced green chilies
-1 tablespoon dry taco seasoning mix (I used Lawry's-it had the least amount of sodium)
-1/2 tablespoon garlic powder
-1/4 teaspoon crushed red pepper (or more if you like it hot, hot, hot!)
-1/8 teaspoon black pepper
-1/2 pounds raw, boneless, skinless chicken breasts
-small dash of salt
Directions
1. Add all ingredients except chicken to slow cooker. Mix well.2. Add chicken and coat well with sauce.
3. Cook on low for 7 to 8 hours or high for 3 to 4 hours.
4. After cooking, remove chicken and place in large bowl. Use 2 forks to shred chicken.
5. Return to slow cooker and mix well.
6. Place some of the chicken on a tortilla and sprinkle with cheese...enjoy!
