Smokin' California Turkey Burger with Ro*Tel Jam1 pound ground turkey
2/3 cup finely chopped red onion
3 tablespoons diced pimientos, drained
6.5 oz. marinated artichoke hearts, drained, chopped
2 teaspoons olive oil plus additional for brushing
1 garlic clove, minced
1 teaspoon fresh oregano, minced
1 teaspoon fresh thyme, minced
1 teaspoon coarse kosher salt
1 teaspoon freshly ground black pepper
4 slices of Swiss cheese
2 slices red onion, 1/4 inch thick, separated into rings
Lettuce leaves such as Romaine or Arugula
Mayonnaise, light
4 kaiser rolls, halved horizontally
Spicy Ro*Tel Jam
2 10 oz. cans Ro*Tel diced tomatoes & green chilies, original with juice
1 cup finely chopped red onion
1 garlic clove, minced
2 tablespoons balsamic vinegar
1 teaspoon fresh rosemary, minced
1/2 teaspoon coarse kosher salt
1/4 teaspoon black pepper
Directions
For Jam:Over medium-high heat, in a heavy saute pan, add entire jam ingredients in given order. Cook over medium-high heat until almost all liquid evaporates and mixture is reduced to about 2 cups, stirring occasionally, about 15-20 minutes. Set aside.
For Burgers:
Heat oven to 450 degrees.
Gently mix turkey, onion, pimientos, artichoke hearts, 2 teaspoons olive oil, garlic, oregano, thyme, generous 1/2 teaspoon coarse salt, and generous 1/2 teaspoon pepper in medium bowl. Form into 4 patties, each about 1 inch thick. Brush with olive oil and sprinkle with salt and pepper.
Broil burgers until charred on both sides and cooked through, about 5 minutes per side. Add sliced Swiss cheese, broil until melted and bubbly. Broil cut side of rolls until toasted, about 2 minutes. Assemble burgers with mayonnaise, lettuce, onion rings, Ro*Tel jam and enjoy!!
