Recipe Ingredients

Dumplings:
½ lb Ground Turkey
½ Cup Andouille Sausage – Diced very small
¼ Cup Green Onions - Minced
¼ Cup Ro*Tel Original (Or habanero if you can stand it!) See method.
2 Oz Smoked Gouda - Grated
¼ tsp Cajun Seasoning
¼ tsp Onion Powder
¼ tsp Garlic Powder
½ Tsp Black Pepper

30 Ea Wonton Wrappers

Dipping Sauce :
1 Ea 12oz Pale Ale Beer
Remaining Ro*Tel Original 1 Tsp
½ Cup Sweet Chili Sauce
¼ Cup Light Brown Sugar
1 Tsp Soy Sauce

Directions

Method:
Drain Ro-Tel over a bowl. Save juice for Dipping Sauce. Use ¼ Cup of Ro*Tel for the Dumplings and remaining with juice for the Sauce.

Mix in a bowl - Turkey, Sausage, Onions, ¼ Cup Ro*Tel, Gouda and seasoning. Mix well and refrigerate while you prepare Dipping Sauce.

In a small saucepan bring the pale ale, and remaining Ro*Tel to a boil. Reduce liquid by half. Add Chili Sauce, Sugar and Soy Sauce and bring to a slow boil for 5 minutes – stirring occasionally. Pull off the heat and let cool to room temperature.

You will cook the dumplings in an Electric or Stove Top Steamer.

Wipe a little vegetable oil on the steamer tray. Place a heaped teaspoon of turkey mix in the center of a wonton wrapper. Pull up the sides to form a pouch. Pinch the corners together and place in steamer tray. Repeat for the other wrappers.

Steam for 20 minutes and serve with dipping sauce.
