1/2 cup sour cream1/2 cup nonfat Greek yogurt
4 eggs, beaten
3 cups shredded cheddar cheese
4 scallions, chopped reserve 1 for garnish
1 can original rotel drained, reserve 1/4 cup of rotel and 2 TB juice set aside.
dash of salt and black pepper to taste
2 ripe avocados, sliced
2 9-inch deep pie shells
Spiced Ranch
1/4 cup of reserved rotel and juice
1/2 cup light ranch
2 tablespoons sour cream
Shredded lettuce
Directions
Preheat oven to 375 degrees.Mix sour cream, yogurt, eggs, and cheese. Stir in 3 scallions (reserving 1 for garnish), rotel, and salt and pepper. Evenly lay avocados on bottom of pie shells. Pour cheese mixture over avocado slices and spread out. Bake until set, golden, and puffy, about 40 to 45 minutes. Let stand 10 minutes before serving.
Mix ranch and reserved rotel , 2 tablespoons of juice, and 2 TB Sour cream.
Top quiche with shredded lettuce and drizzle with spiced ranch. Garnish with scallion.
