Recipe Ingredients

1 cup all purpose flour
1 1/2 cups yellow corn meal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup Monterey Jack Cheese, grated
1/2 cup + 1/4 cup cheddar cheese, grated
2 eggs
1 cup buttermilk
1/2 cup sour cream
1/4 cup melted butter
1/4 cup brown sugar
3 tablespoons granulated sugar
1 can (10 ounce) RO*TEL Mild

Directions

Mix flour, corn meal, baking powder, baking soda, salt, Monterey Jack cheese and Cheddar Cheese (1/2 cup) in a bowl and mix until all ingredients are blended together.

With a fork whisk eggs, buttermilk, sour cream, butter, brown sugar and granulated sugar until an even mixture.

Add wet ingredients to dry ingredients. Add RO*TEL (entire can – do not drain!) and mix thoroughly. Let mixture set for 30 minutes before adding to muffin tin. Grease a standard sized 12-hole muffin tray with butter. Pour even amounts of batter into each greased muffin hole. Top with shredded cheddar cheese (1/4 cup) and bake at 400 degrees for 20-25 minutes
