Recipe Ingredients

4 Chicken Breasts (bone in or out)
1 can of Rotel Tomatoes with Chilies (mild)
1 tbsp Olive Oil
1 tsp oregano
1 tsp garlic salt
1/2 tsp onion powder
1 packet of Yellow Rice mix
1 cup frozen peas

Directions

Preheat oven to 350 degrees F.

Place Chicken breasts in a large baking dish.

In a bowl mix together the can of Rotel tomatoes, olive oil, oregano, garlic salt, and onion powder.

Pour mix over chicken and bake for 30-40 minutes or until cooked through.

While chicken is cooking prepare rice according to package instructions. 2 minutes before rice is finished stir in 1 cup of frozen peas.

Serve Chicken over Yellow rice, green salad, and cuban bread
