1 small pkg. of spinach and cheese tortellini1 green zucchini
1 yellow zucchini
1 sweet onion
2 garlic cloves, minced
1 can of Rotel, "hot" with habanero peppers
1/4 cup olive oil
2 tsp. sea salt
black pepper to taste
Directions
In a large sauce pan cook pasta according to pkg. directions. While pasta is boiling, saute olive oil, garlic, salt and pepper in a deep skillet over medium high heat for 2 min. Next add zucchini, onion, and Rotel. Cook until pasta is ready and add drained pasta to the skillet. Cover and cook on low for 15-20 min. This can be served as a main dish or as a side.
