2 minced garlic closed (about 1 Tablespoon)1 can mild Ro-tel with chili
1/2 peeled, seeded cucumber diced
black pepper to taste
1/4 cup red wine vinegar
3 scallions (green onions) minced
1/3 cup minced cilantro or celery leaves
2 teaspoons paprika
3 cups tomato juice
1 cup beef broth
2 Tablespoons lemon juice
Garnishes:
lemon wedges,
cilantro,
sour cream,
diced avocado
Directions
Mix all ingredients, except garnishes, in a large bowl or pitcher.Cover and chill for at least 4 hours.
Serve cold with garnishes, as desired.
This recipe can be made 1-2 days in advance, so it is great for parties.
