• 1 tbsp olive oil• 1 cup chopped sweet onion
• 1 tbsp minced garlic
• 1 tablespoon chili powder
• 2 teaspoons ground cumin
• 1/4 teaspoon salt
• 1/4 teaspoon freshly ground black pepper
• 1/2 teaspoon red pepper flakes
• 1 tbsp Tabasco
• 15 oz. can kidney beans, drained
• 15 oz. great northern beans, drained
• 29 oz. can white hominy, drained
• (2) 10 oz. can RoTel Original diced tomato & green chilies
• 10 oz. can RoTel Hot diced tomato & green chilies
• 1 cup beef broth
• 1 cup sour cream
• 1 cup shredded pepper jack cheese
Directions
Heat oil in a large stockpot over medium-high heat.Add onion and garlic to pan. Sauté for about 4 minutes or until onion has started to soften.
Stir in chili powder through Tabasco. Cook for about 2 minutes.
Stir in kidney beans, great northern beans, hominy, RoTel, and broth; bring to a boil. Reduce heat, and simmer 20 minutes.
Serve with sour cream and cheese.
