Recipe Ingredients

* 1 - 1.5 lbs. ground turkey meat
* 1 medium sized onion diced (red or white... I used a mix of both)
* 1 - 2 garlic crushed garlic cloves
* 1 can Ro*tel
* 1 can of kidney beans (drained)
* 1 small can tomato sauce
* 2 tablespoons of chili powder
* 1 teaspoon each of: oregano, paprika, cumin
* 1 chicken boullion cube
* 6 hot dogs/hot dog buns
* Sharp cheddar cheese (shredded)
* salt/pepper to taste

Directions

Cook onions in a big saute pan until translucent and remove. Brown turkey (in same pan) and drain fat. Add onions back into pan with turkey and add all remaining ingredients except the hot dogs, buns and cheese. Bring to a simmer, cover and let sit for 20 or so minutes.

Meanwhile, fill a small saucepot with beer and bring to a boil. Add hot dogs and cook for about 5 minutes. Transfer hotdogs to a frying pan with a small pat of butter to crisp the skins. Then, add the hot dogs to the chili while it finishes simmering. In a shallow baking dish, line up hot dog buns and toast for a few minutes. Add hot dogs, spoon chili over the dogs and sprinkle with cheese. Place under the broiler for a couple minutes until cheese melts.
