Recipe Ingredients

- 1 14oz can Ro*Tel Original
- 1 medium onion, chopped
- 3 Cups shredded cooked chicken (14 oz)
- 4 Corn Tortilla’s
- Cooking spray
- 1 avocado, pitted
- 1/3 Cup Ro*Tel Mexican , drained
- 2 TBS reduced-fat Sour Cream
- 1 TBS fresh cilantro, chopped
- 1 Cup shredded lettuce
- ½ Cup shredded Cheddar cheese
- ½ tsp cumin

Directions

- Preheat oven or grill to 400 degrees
- Bring Ro*Tel Original and its juice to a boil in a saucepan over medium heat. Add onion, cook, stir occasionally until most liquid has evaporated (approximately 20 minutes). Add Chicken and cumin. Cook until heated through (approximately 2 minutes)
- Meanwhile coat tortillas with cooking spray on both sides and place on large baking sheet. Bake in oven or on grill, turning once, until light brown and crispy (approximately 10-15 minutes, depending on crispy preference)
- Mash avocado in a bowl. Mix in Ro*Tel Mexican, sour cream, and cilantro until combined
- Layer tostadas as follows: coat tortilla shell with Ro*Tel Mexican avocado mixture. Top with chicken mixture, cheese and lettuce
Serve with your favorite Mexican side dish such as black beans or Mexican rice and ENJOY!
