Recipe Ingredients

6 Flour Tortillas
1 can Ro*Tel Chunky
1 can Ro*Tel Mexican
2 cans Black Beans (drained)
2 bags Shredded Cheddar Cheese
1 small bag frozen corn niblets
1 bunch fresh scallions (chopped)
1 red onion (diced)
1 can of cooking spray

Directions

First Mix the 2 cans of Ro*Tel together.
Spray the entire inside of an Iron Skillet with cooking spray.
Place a Flour Tortilla on the bottom.
Spread a thin layer of the Ro*Tel mixture on the tortilla.
Sprinkle some of the Shredded Cheese over the tortilla.
Then follow with a layer of beans, corn, scallions and onion.
Top with some more cheese and then a tortilla.
Continue these steps until you are left with the last tortilla.
Top the lasagna with the last tortilla. Spray tortilla with cooking spray.
Bake in a pre heated 350 degree oven for about 1/2 hour.
Take out of oven when baked through. Let sit for about 15 minutes until lasagna sets.
Cut into four servings
