10Recipe Ingredients
1 pound ground beef (can substitute ground turkey)1 large yellow onion diced
1 16 oz can corn
1 16 oz can black beans (Bushs work best)
3 jalapenos diced
3 cloves garlic diced
1 tbsp oil
1 8 oz can mushrooms
1 16 oz can Rotel tomatoes with hot green chilies
Optional: 1 16 oz can black olives
1 tsp salt
1 tsp pepper
1 tsp worcestershire sauce
1 package of 10 count whole wheat tortilla shells
2 8 oz packages of shredded cheese (hot, mexican or taco blends taste great)
Directions
Heat oil and worcestershire sauce in big skillet. Add diced onions, jalapenos and garlic. Cook until tender. Add ground beef.While beef mixture is cooking, in strainer add corn, black beans, tomatoes, mushrooms, olives and drain well with cold water.
When beef mixture is cooked, drain well and pour back into skillet, add the veggie mixture. Cook until hot about 5-8 minutes.
Preheat oven 350 degrees on large round cookie sheet, place three tortilla shells side by side.
Sprinkle cheese on bottom of shell, add meat mixture to cover tortilla, sprinkle on more cheese and place another tortilla shell on top. Bake 10 minutes in oven. Place quesadillas on plate and cut into four sections.
Repeat for last 4 tortilla shells.
