Recipe Ingredients

3 medium zucchini squash, diced
1/2 cup diced bell pepper
1 can Rotel (drain liquid)
2 cups frozen corn
1/2 teaspoon cumin
1 teaspoon oregano
salt and pepper to taste
1 cup cheddar or monterey jack cheese
1 package flour tortillas

Directions

Place diced zucchini, bell pepper and corn in a skillet over medium heat and saute until tender.

Open a can of Rotel and drain off most of the liquid. Add to the vegetable mix in the pan and heat through.

Add cumin and oregano. Salt and pepper to taste.

In a separate skillet, heat a tortilla until warm. Remove and place on plate with 1/2 cup of cheese, then about 2/3 cup of the veggie mix. Fold tortilla into a burrito shape. Cut in half to serve.
