Recipe Ingredients

*1 1/2 lbs. ground beef
*1 onion, diced
*1 teaspoon garlic powder
*1 teaspoon salt, or to taste
*pepper, to taste
*1 large OR 2 small to medium zucchini, chopped
*2- 10 oz cans ROTEL Original Diced Tomatoes and Green Chilies
*16 oz. sour cream
*1-6 oz. bag seasoned croutons (garlic, garlic & herb, garlic & cheese)
*2 cups shredded Colby Jack Cheese

Directions

1. Preheat oven to 350 degrees. In a skillet, season ground beef with garlic powder, salt, and pepper. Add in diced onion. Brown the beef until no longer pink and drain the fat.

2. Add in chopped zucchini and ROTEL Original. Bring to a boil. Reduce heat and cover. Simmer, stirring occasionally for 30 minutes.

3. Remove from heat and stir in 16 oz. sour cream.

4. Place croutons in the bottom of a 13 X 9 inch baking dish.

5. Pour the beef mixture over the croutons. Sprinkle 2 cups shredded Colby Jack evenly over the top of the casserole.

Bake for 30-40 minutes until the cheese is melted and the casserole is bubbly.
